Rahul Akerkar was one of the first Indian chefs and restaurateurs to create independent fine-dining restaurants in India in the 1990s, working outside the Indian five-star hotel business and focusing on carefully sourced food and high-quality service. Akerkar launched Qualia, a brand-new restaurant, in Mumbai's Lower Parel in April 2019.
